The mousespeed in the Pilot Menu is very slow for me (I am running full screen - 2K) and doesn't respond to mouse speed settings. In-game it is perfect and responds to mouse speed options.
If I change to a smaller window the mouse speed in the pilot menu is much better so I am guessing mouse acceleration has to do with full-screen / screen size calculation?
